  1. In a pan add sugar, water and cardamom and bring to boil. When reached one string consistency remove from flame.
  2. In a bowl sift flour, baking soda and baking powder. Add clarified butter and mix with finger tips to form coarse crumbs.
  3. Add yogurt to flour and gently mix with fingers. Don't knead like a dough. Cover and let rest for 20-30 mins.
  4. Shape the dough into desired shape.
  5. Heat clarified butter to medium heat and then reduce the flame to low. Gently slide the prepared balushahi into ghee.
  6. When the balushahi floats in oil flip it. Keep the flame low so that it is evenly cooked.
  7. When balushahi turns golden brown transfer to the sugar syrup. Soak for 2-3 mins then remove from sugar syrup.
  8. Garnish with chopped pistachios. Serve cold.
