  1. Marinate eggplant pieces with salt and fish with salt & turmeric. In a bowl mix cumin powder, turmeric powder and salt with 1/3 cup water.
  2. Heat oil in a pan. When oil starts smoking add fish and fry golden brown on both sides at medium - high flame.
  3. Transfer fish to a plate and in the remaining oil fry eggplant pieces at flame medium. When eggplant turns golden brown transfer to a plate.
  4. In the remaining oil add bori and fry till golden brown. Transfer bori to a bowl.
  5. Now add cumin seeds and chilies to remaining oil in the pan. Saute for 10 sec and then add the soaked spices. When oil starts separating from spice mixture add hot water for stew.
  6. When stew comes to boil add bori, eggplant and fish. Cook for a min or two and then add chopped cilantro.
  7. Serve hot with steamed rice.
