Chandrakala
Chandrakala is made in various states in India and the stuffing varies from place to place. It is stuffed with khoya(dried milk), semolina or coconut mixed with dry fruit and nuts.

Instructions
for stuffing
  1. In a wok add scraped coconut, raisins, chopped nuts, sugar and cardamom powder. Cook at medium low flame and stir occasionally.
  2. When coconut turns to crumby texture and falls easily from spatula add condensed milk.
  3. Cook for more one minute then transfer to a plate and let cool.
for dough
  1. In a mixing bowl add flour, clarified butter and salt. Mix well with fingers till the flour turns crumby.
  2. Add water little by little to the flour mixture and knead to soft dough.
  3. Cover the dough and let rest for 15 mins.
for sugar syrup
  1. In a saucepan add sugar, saffron and water and bring to boil.
  2. Dip a spoon in syrup and let cool. Touch with thumb and press with finger and pull apart. Check for one string consistency.
  3. When the syrup turns one string consistency add lemon juice to avoid crystallisation.
for Chandrakala
  1. Divide the dough to 10 equal portions. Roll a portion to 3 inch circle.
  2. Place a spoonful of stuffing in center and fold. Press the edges and gently twist to seal.
  3. Repeat the same with the remaining ingredients.
  4. Heat clarified butter for deep frying. Add a piece of bread to reduce the temperature.
  5. Fry Chandrakala golden brown at medium flame and immediately soak into hot syrup.
  6. Soak for 10 mins then remove from syrup.
  7. Serve cold.
