  1. Wash okra and dry them using a kitchen towel. Cut in 1 1/2 or 2 inch pieces.
  2. Heat 2 tablespoons mustard oil in a pan. When oil starts smoking add okra and cook at medium flame without lid. Stir occasionally.
  3. When okra is cooked add salt and mix well (add less salt because we will add salt further in onion and tomato). Transfer to a plate.
  4. Heat 1 1/2 tablespoons of oil in same pan. Add onion slices and saute till translucent.
  5. Now add ginger and garlic paste and saute till raw smell is gone.
  6. Add tomato slices, turmeric, salt, and cook with lid till soft and mushy. Stir occasionally.
  7. Add coriander powder, paprika and garam masala. If it is too dry then add 1-2 tbsps of water and mix.
  8. Now add the fried okra and mix well. Cook for more 2 mins.
  9. Serve hot with chapati or paratha.
