  1. In a saucepan add sugar, lemon juice, cherries and 1 tablespoon water. Boil till the sugar melts and turns to a thick syrup.
  2. Remove cherries from syrup and keep aside.
  3. Cut dark compound into small pieces. Place the pieces in a double boiler and stir till it melts completely.
  4. Now add the candied cherries, raisins, almonds and cashews and mix well.
  5. Grease a silicon mould and pour the mixture in it.
  6. Refrigerate for 2-3 hrs. When set demould and cut into pieces.
  7. Fudge is ready to serve.
