Biryani is the dish of the kings! Hilsa is the king of fishes! Fuse them together to get a royal reflection of the pan indian culinary art.
Boil rice ( Cook 3/4th) with salt. Strain and keep aside.
Marinate fish pieces and fish head (cut into 2 pieces) with salt and turmeric. Heat refined oil and fry fish head and pieces. Fry at medium flame till done. When golden brown on both sides transfer to a plate.
In the remaining oil add bay leaf, cinnamon, cardamom, clove, peppercorn and chilli. Saute for 30 secs then switch off the flame. Add rice and garam masala and mix well.
In a saucepan add 200 ml of water and fried fish head and boil till reduced to half. Strain the stock.
In a frying pan heat clarified butter and fry onions till brown.
In a microwave safe bowl layer 1/2 portion of rice then fish pieces, then remaining rice and lastly brown fried onions. Pour the stock evenly and then microwave for 8-10 mins or till the stock is absorbed.
