  1. Boil rice ( Cook 3/4th) with salt. Strain and keep aside.
  2. Marinate fish pieces and fish head (cut into 2 pieces) with salt and turmeric. Heat refined oil and fry fish head and pieces. Fry at medium flame till done. When golden brown on both sides transfer to a plate.
  3. In the remaining oil add bay leaf, cinnamon, cardamom, clove, peppercorn and chilli. Saute for 30 secs then switch off the flame. Add rice and garam masala and mix well.
  4. In a saucepan add 200 ml of water and fried fish head and boil till reduced to half. Strain the stock.
  5. In a frying pan heat clarified butter and fry onions till brown.
  6. In a microwave safe bowl layer 1/2 portion of rice then fish pieces, then remaining rice and lastly brown fried onions. Pour the stock evenly and then microwave for 8-10 mins or till the stock is absorbed.
  7. Serve hot.
