Instructions
  1. In a mixing bowl combine plain flour, clove powder, sugar, salt and ghee. Use fingers to rub the ghee. Mix till flour reach a crumbled texture.
  2. Gradually add water and knead to a soft dough. Let the dough rest for 20 mins.
  3. In a pan mix khoya with condensed milk, cardamom powder and sugar at low flame. Keep stirring.
  4. When the ingredients are well combined and turns thick or reaches required consistency remove from flame. Let cool.
  5. Divide dough into 12 equal portion balls.
  6. Roll a ball with help of little clarified butter into a 3.5 inch circle. Place a spoonful of filling in the center.
  7. Fold one side inward to cover the filling. Now fold the opposite side too to overlap the previous fold.
  8. Gently hold the two ends and flip. Now fold both ends to overlap and form a parcel.
  9. Use a clove to tuck the pastry folds. Repeat the same with the remaining ingredients.
  10. In a saucepan add sugar, crushed cardamom and water. Boil till reaches one string consistency .
  11. Heat sufficient ghee in a pan and drop a piece of bread in the hot ghee. Reduce the flame to medium-low to cook evenly and add 2-3 lobongo lotika at a time.
  12. Fry till golden brown in colour.
  13. Soak the fried lobongo lotikas in warm sugar syrup. 3-4 mins should be enough for the lobongo lotikas to soak to the sugar syrup.
  14. Remove from syrup and serve cold.
Recipe Notes
  1. Dropping a piece of bread in ghee avoids over heating.
  2. Adding lemon juice to sugar syrup when reaches required consistency avoids crystallization .
