In a mixing bowl combine flour, carom seeds, salt and refined oil. Add water little by little and knead to a soft dough. Let dough rest for 15 mins.
In another mixing bowl combine cottage cheese, cilantro, paprika, shahi garam masala, amchur and salt. Mix well and divide into 8 equal portions.
Divide dough into 8 equal balls. With the help of rolling pin roll into a small disc. Place one portion of stuffing in the center and gather the edges to seal.
Roll it into a paratha. Heat a griddle and cook the paratha on both sides at medium flame. When done finish it by spreading a teaspoon of clarified butter and then roast on both sides till brown spots appear.
Repeat the same with the remaining ingredients. Serve hot with pickle.
